Shrimp and Basil Ponzu In a glass bowl combine marinade, cover, and chill until serving time (marinade can be made up to 24 hrs. ahead): 1/3 cup chopped fresh basil 2 Tb lime juice 2 Tb orange juice 2 Tb lemon juice 1 Tb fresh minced ginger 2 tsp low sodium soy sauce 1 tsp chili garlic sauce (Lee Kum Kee is good) 2 tsp brown sugar 2 tsp vegetable oil (I also add a few drops of dark sesame oil) When ready to serve, take 1.5 lbs of precooked, chilled, jumbo shrimp and toss with marinade. Serve immediately. Use a small platter and provide toothpicks.
