Sweet Potato Casserole Recipe By : Bev Dunning Serving Size : 12 Preparation Time: 1:00 can do the night before Category : Holiday Favorites Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups mashed sweet potato (4 large potatoes)-peeled and boiled 6 tablespoons butter 1 1/2 cups white sugar 2 eggs 1 cup evaporated milk 1/2 teaspoon nutmeg 1/2 teaspoon cinnamon 1 teaspoon vanilla 3/4 cup oatmeal 1/2 cup chopped walnuts 1/2 cup light brown sugar 3 tablespoons butter Mix the mashed sweet potato, 6 tablespoons butter, white sugar, eggs,evaporated milk, nutmeg, cinnamon, and vanilla together and bake at 425 degrees for 15 minutes. For the topping, crumble together the oatmeal, nuts, brown sugar, and 3 tablespoons of butter. Sprinkle over casserole. Bake at 400 degrees for approximately another 15 minutes. Watch carefully- so that the topping does not brown too much!
