Roasted Asparagus Salad 1 lb asparagus, cut diagonally into 1/2 inch pieces Dressing: 1/2 cup orange juice 1 Tb Line juice 2 Tb orange marmalade 1/2 tsp grated ginger 1-2 Tb olive oil 7 cups chopped romaine 3 Tb toasted pine nuts or slivered almonds Roast asparagus (sprayed or rubbed with olive oil) in oven until tender (10-12 minutes). Mix rest of ingredients to form dressing. Top salad with asparagus.
