Pennsylvania Dutch Funnel Cakes Vegtable Oil for frying 1 egg 2/3 C milk 1-1/4 C all-purpose flour 2 T granulated sugar 1 t baking soda 3/4 t baking powder 1/4 t salt Confectioners sugar, molasses, or pancake syrup 1. Fill an electric skillet with oil to the depth of 2 inches and heat to 375 degrees. 2. Beat together the egg, milk, flower, granulated sugar, baking soda, baking powder, and salt until smooth. 3. Holding a forfinger over the end of the funnel with a 1/2 inche opening, pour about 1/2 C batter into the funnel. Drip batter, controlling the flow with the forefinger, into hot oil, beginning in the center and swirling it into 3 inch circles. Fry until light brown, about 2 minutes on each side. Drain on paper towel. Keep warm. Repeat with remaining batter. 4. Sift confectioners sugar lightly over warm cakes. Makes 2-2.5 cakes
