Lobster Bisque Serves 6 1/2 minced onion 4 T (1/2 stick) butter 1 T paprika 2 T flour 2/3 C (scant) milk 2/3 C (scant) light cream 2/3 C (scant) water 1/4 C sherry 2 T lobster base (available at specialty shops) 2 ox. lobster meat cut into chunks In a 1.5 qt. saucepan saute onion in 2 T butter until onion is soft, about 5 min. Add remaining butter, paprika, and flour. Make roux and let cool. Stir in milk, cream, and water, bring to a boil, reduce heat and add sherry, lobster base, lobster meat; stir gently, serve immedately.
