Apple Puffed Pancake with Orange Syrup 6 eggs 1 1/2 c milk 1 c flour 3 T granulated sugar 1 t vanilla extract 1/2 t salt 1/4 t cinnamon 1 stick butter 2 apples, peeled, sliced, thin 2 T brown sugar 425 oven. 9X13 glass dish. Combine all but last three ingredients in mixer bowl. Melt butter in glass baking dish. Layer apples in butter and return in oven until sizzles. Don't let the butter brown. Remove pan from the oven and immediately pour in batter and sprinkle with brown sugar. Bake for 20 min or until golden. SYRUP: 1 C brown sugar 1/2 C orange juice 2 T grated orange peel combine all ingredients simmer over low heat for 5 minutes. SERVES 6. Katie's NOTE: Aunt Carol gave this recipe to me in hopes that it would be like Bibbler's recipe. She has not tried it yet.
